1)Roast your sliced pumpkin for about 30 mins at 200 degrees. Once cooled peel and chop it into cubes.
2) Saute some onions and garlic in a pan with a oil of your choice. Add the pumpkin cubes in it.
3) Add vegetable broth or plain water along with some salt, pepper and nutmeg.
4) Allow it to simmer for 15 mins for the flavors to mix
5) Add some plant based milk (I used Cashew and oats, but coconut milk works great too) for the creamy texture.
6) Blend everything to a soup consistency
7) And ta-da you have a delicious, creamy, bowl of pumpkin soup!
